Summer flavours

How’s your Saturday? Mine has been containing food and reading books. This is the dinner we just had on the balcony. It’s a sauce (scroll down for ingredients), romaine lettuce with feta cheese, olives, cucumber, tomatoes, olive oil, balsamic vinegar & salt & pepper. Boiled potatoes, soft boiled eggs, melted butter with salt & pepper & a small glass of white wine.

The sauce is:

Swedish gräddfil (sour cream), fresh lemon juice, red onion, lots of dill, hot sauce (not much), salt & pepper.

Have been eating way too many carbs this week and feel so heavy. One day it was pasta both for lunch and dinner. Yesterday pizza for lunch and dinner. It really has a big impact on my mood, so I will try not to make pasta for lunch almost every day.

Do you have a favourite recipe to share (can also contain carbs, I’m not going to be too anal about it)? I could use some inspiration. Thank you <3

    Hi Sandra!
    I have been making this soup a lot, it’s good cold too. I love it.i add glass noodles when I want a pasta flavor and I usually put some lime juice and fresh corriander at the end
    I use a dashi broth instead of water for extra flavor- here is a recipe ( i sometimes add a few dried, smoked tomatoes too)
    I love pasta too! but i crave this recipe in the summer.
    thank you for your posts, i love the photos and stories. I miss germany since I can’t travel yet this year so I extra appreciate it. xx

    Pearl barley as the base for a grain salad. Cook a big batch and keep it in the fridge to top with different things. Dress it with whatever vinaigrette you like (I do oil, vinegar, Dijon mustard and maple syrup). Add veggies and something protein-y. I like feta and carrots roast with cumin, mackerel with beetroot, and roast squash, green beans and cannelini beans. Also, I always top it off with breadcrumbs fried in olive oil and garlic because I want something crunchy with the soft things.

    I slice up tofu in 1 cm layers and put salt, pepper and soy sauce on it. Let it marinate. Fry in sunflower oil, with some garlic. Add chopped sellery leaves at the end. I eat it with rice, stir fried pakchoy and a cold, fairly spicy peanut sauce. Sriracha sauce would work as well.
