Checked the fridge this morning to see what vegetables had to be cooked before being too tired of life. There was an eggplant, a red bell pepper, some celery and very tired coriander/cilantro. It was time to cook something to have with steamed sushi rice and a runny egg. These are food items picky eaters usually aren’t fans of. I can handle picky eaters as long as they don’t talk about it or even worse – WHINE – but I prefer not to cook for them. Today’s lunch would be evil to invite people over for, picky or not, I guess.
So, this is what was in the evil veggie thing for 2 people:
1 red bell pepper, 1 eggplant, 2 celery stems, 2 cloves of garlic, a bunch of coriander/cilantro, half a chili pepper, a splash of light chinese soy & a splash of chinese rice vinegar + water. I chop everything, throw everything in a pan with a lid and let it simmer for about 20 minutes while the rice is in the steamer (30 mins, ever since I discovered how amazing it is to cook rice in the steamer, I haven’t touched a pan). Some tired spring onions on top.
Served it with this chili oil. I’ve made it a couple of times, last time I added 3x more sichuan pepper and half the amount of five spice, but I still don’t think it’s what I’m looking for.
