
Johan and I have become obsessed with these Filipino eggplant omelettes. Burning them on the stove is tons of fun. I prefer to eat them with a Thai inspired dip sauce with chili pepper, grated ginger, garlic, fish sauce, soy, sesame oil and I guess something else. The cucumbers are drizzled with a sauce made of soy, sesame oil, rice vinegar, green chili, garlic and sesame seeds. Always a favourite.

June 26, 2021 at 6:56 amI had this in the Philippines when I visited the country in 2013 and I still dream about it! I haven’t got a gas stove and I think I’m fairly lazy so I haven’t gotten around to do this dish yet.
It is however FANTASTIC! So good! I dream of this, the stuffed banana blossom in coconut milk (can’t remember the name of the dish now…) and watermelon slush! Oh and lumpia!
Hm I guess I have to add eggplant to my shopping list now… :o)
