
Hi there, are you having a nice Sunday so far? I slept over 11 hours, been exhausted lately. Too much social life, too little work (= stress & anxiety = very nonproductive), a minimum of walks, late nights. Yesterday I spent most of the time reading a book (Men without women by Haruki Murakami) and watching Fantastic Beasts and Where to Find Them while eating a salad with tzatziki and pasta with tomato sauce & burrata.
Let’s talk about the dish above now.
It’s steamed rice (I steam 1.5 deciliter of rice & 1.5 deciliter of water + salt in the steamer for 30 minutes with a great result every time). Sprinkled some sesame seeds over the rice.
It’s a salad made of cucumber, seaweed, carrots, spring onions in a sauce made from soy, rice vinegar & sesame oil.
A fried egg.
A stew made of zucchini & eggplant (cook the eggplant for at least 25 minutes in neutral oil, I want it mushy and not spongy, the zucchini a bit shorter depending on how soft you want it). I added salt & chilli flakes while it was cooking (Never understood the concept of adding the salt at the end).
Top with some sambal oelek.
It turned out delicious. I never measure the ingredients, except for the rice, so you’ll have to use your imagination and tastebuds. Just skip the egg if you want it vegan.

Here is a salad I made this week. Simple, fresh, summery & delicious.
It’s romain lettuce topped with a sauce made of olive oil, apple cider vinegar, dijon mustard, finely chopped red onion, salt & pepper.
Tomatoes with a bit of salt.
Sardines.
Kalamata olives.
Parmesan cheese & fresh basil.
I served it with tzatziki by the way. Just skip the sardines if you want it vegetarian, skip the sardines, parmesan cheese & tzatziki if you want it vegan. Maybe add some more olives and/or chickpeas for more proteins.
Have a nice end of the weekend. Do you have a dish you cook more often than others? For me it’s pasta with tomato sauce & mozzarella, I’m making the sauce a bit different every time and I almost always add creme fraiche to make it more creamy – is that a cardinal sin in Italy?
